Banana Nut Bread by

3 Eggs 1/2 c Oil 4 tbsp Buttermilk 1 tsp Soda 1 tsp Vanilla 1 tsp Lemon Juice 2 c Flour 1 c Sugar 1/2 tsp Salt 3 tsp Baking Powder 1 c Ripe Bananas, mashed 1/2 to 1 c Pecans, chopped |
Dissolve soda in buttermilk, beat in eggs, add oil and buttermilk mix. Add vanilla and lemon juice. Mix dry ingredients: flour, sugar, baking powder, salt. Add to wet mix. Blend well. Add bananas, mix well. Pour batter into greased loaf pan and bake for 50-60 min in a 325 degree oven or until a toothpick inserted in center comes out clean. |
